Raw Chocolate Cheesecake
Yes you heard me right, a healthy chocolate cheesecake (sugar free, dairy free & gluten free), that not only tastes great but has the added benefits of lifting your mood. Cashews are loaded with lots of nutrients that can boost serotonin levels and help fight depression. Serotonin is responsible for the feeling of well-being and relaxation, while the raw cacao in this cheesecake also helps improve and increase a persons circulating serotonin levels.
For the base:
2 cup raw pecans
2 tablespoons organic extra virgin coconut oil
1/4 cup raw cacao powder
1/4 cup pure organic maple syrup
a pinch of pink Himalayan sea salt
For the filling:
2 cups raw cashews (no need to soak)
1 cup peeled & diced organic zucchini (approx one large)
1/2 cup raw cacao powder
1/2 cup pure organic maple syrup
1 tablespoon vanilla powder (or extract just make sure it is sugar free)
1/4 teaspoon pink Himalayan sea salt
1/4 cup organic extra virgin coconut oil, melted
Prepare the base by placing the pecans in a food processor and grind them into fine meal. Add in the rest of the base ingredients, and process again until well combined. Line the bottom of an 8-inch spring form pan with plastic wrap or baking paper, then press the crust evenly into the bottom of the pan. Place the pan in the freezer to set, while you prepare the filling.
In a high-powered blender or food processor, process the raw cashews until they are a fine powder. Add in the zucchini, cacao powder, maple syrup, vanilla extract, and sea salt, and blend again until a smooth and creamy batter is formed. Add in the melted coconut oil, and blend again to fully incorporate the ingredients into a uniform filling.
Pour the filling on top the frozen base, and allow to set for 2-3 hours, or until hard to the touch. Serve directly from the freezer, for best texture allow to sit outside for 5 mins so its nice and creamy when eaten. I topped mine with a mixed berry sauce.
Berries are just coming into season now, however the frozen organic ones are perfect for this sauce, and will save you money. Berries are a great sauce of resveratrol, and anti-aging antioxidant. The tartness of the berries is also a great match against the cheesecake.
2 cups of frozen organic berries
1/4 cup of filtered water
Juice from 1/4 of an orange
Add the frozen berries, water and the juice into a saucepan on a medium to high heat. Stir occasionally till it comes to a boil. When it does, reduce to a low to medium heat and simmer for a further 5 minutes while stirring. Take off the heat and pour through a fine meshed sieve into a large bowl. Allow sauce to cool and keep in fridge until ready to pour on top of your cheesecake.
