Paleo ganash chocolate cake

We all love chocolate, and this cake is gluten free, dairy free, refined sugar free and protein rich. It is a big more decadent than the last cake I made and would make a great birthday cake. It really fills you up while satisfying that chocolate craving. I tested this cake on my partners family and they were amazed that it was actually healthy yet tasted like an indulgent chocolate cake. The best thing about this cake is that it is very easy and quick to make. Hope you all enjoy.

Cake mix ingredients
1/2 cup raw cacao powder
1/2 cup coconut flour
3  teaspoons (7 g) gluten free baking powder
1 teaspoon  cinnamon powder
2 pinchs of sea salt
8  eggs
1/2 cup raw organic honey or organic maple syrup
2 teaspoon vanilla powder
1/2 cup = macadamia nut oil or melted coconut oil or butter

Chocolate ganash ingredients
2  ripe avocados
1/2 cup raw cacao powder|
1/2 cup raw honey
2 tbs melted coconut oil
1 tsp vanilla powder
1/2 tsp of cinnamon powder


Preheat oven to 160 C.
Combine the cacao, coconut flour, baking powder, cinnamon and sea salt.
Add the eggs, honey, vanilla and oil.
Mix well until smooth and combined with a electric beater to a nice airy consistency
Divide the batter into half
Spoon into 2,  25 cm springform baking tins lined with baking paper at the base and sides (makes it easier to remove the cake)
Bake the cakes for 17-20 minutes or until cooked through.
Rest cakes in the tins for 5 minutes then remove and cool on wire racks.
Once cakes are cool cover bottom layer with half the ganash then carefully place top layer on top and cover with remaining.
Add fresh berries for decoration and refrigerate for an hour before eating.
