Paleo Chocolate Cake

Our Paleo Naturopath Samantha this week experimented in the kitchen and came up with this very yummy, gluten free, dairy free and sugar free paleo chocolate cake. Yes the ingredient list does look a little weird, however we can promise you that this is the most moist chocolate cake you have ever tasted which is 100% guilt free.

Ingredients:

  • 2 cups almond meal
  • 1 1/2 cups of avocardo
  • 1 tsp baking soda
  • 1/2 tsp Himalayan salt
  • 1/4 cup raw cacao powder
  • 3 tbs coconut magic coconut oil, melted
  • 1 tsp loving earth vanilla powder (or extract if you don’t have the powder)
  • 2 1/2 tbs Artisian coconut butter (or put a can of coconut cream opened in the fridge over night)
  • 4 tbs raw honey
  • 2 eggs
  • 1/2 cup pecans (plus extras for decorating the top of the cake before putting it in the oven)

Method:

  1. Pre heat an oven to 180 degrees Celsius and line a bread tin (81/2-4 1/2) with baking paper
  2. Chop the pecans till they are broken into little chunks and then mix with the almond meal, baking soda and salt (TM speed 5 for 10 seconds for pecans, then reverse speed 3 for 10 seconds). Put this mix into a separate bowl.
  3. add the avocado to a food processor or thermoix (TM) and blend till creamy. (TM speed 4 for 10 seconds)
  4. add the melted coconut oil, vanilla powder, coconut cream, honey, eggs and mix to combine all ingredients (TM speed 4 for 20 seconds)
  5. fold in the wet ingredients with the dry and then spoon the batter into bread tin and place in the oven.
  6. Cook for 45 minutes, though check it at 30 mins. It is cooked when a toothpick is inserted in the middle and comes out clean. The cake should not be dry and still be nice and moist.
  7. Let it cool in the tin for 10 minutes then on a wire rack.

So there you have it a healthy paleo chocolate cake full of good fats from avocado and coconut.
